Egg Sandwiches

Ingredients:

6 - eggs
8 big slices - fresh bread
3 heaped tbsp - butter (room temperature)
pepper to taste
salt to taste

Method:

  1. Boil the eggs and mash well when still hot.
  2. Add butter, salt and pepper to the mashed eggs, making sure that the butter is well blended with the eggs.
  3. Keep aside.
  4. Trim the sides of the bread.
  5. Spread 2 heaped tbsp of the egg mixture on one slice of the bread.
  6. Place another slice on it and cut diagnolly.
  7. Repeat the same with remaining slices of bread.
  8. Serve with tomato ketchup.
